We threw a surprise (at least I think he was surprised) birthday party for Steve while Nancy was here in Sacramento. We ate cake. We had a great time. Here are a few photos. I believe Steve has more photos as well that will be posted later.

A little bit of a blast from the past. Here are the photos from Beth’s surprise visit to Nancy from last year.

Beth with the help of Steve, completely arranged and surprised me with a South African visit. Here are the highlights of her first week in Africa. We started with hiking in the beautiful Drakensberg Mountains, safari visits to the Kruger & Sabi Sabi where we saw all of the “Big 5″ & then ended with a relaxing stay at my buddy Patty’s, game farm……. Kudu Ranch.

Nancy’s “Texas” Tortilla Soup

Hello EverybodyThought I would pass along my Tortilla Soup recipe. It’s an easy winter meal

START WITH

1 tsp olive oil
1 C onion (chopped)
2-3 cloves of garlic (chopped
2 C chicken (diced)

COOK ABOVE TOGETHER UNTIL THE CHICKEN IS DONE

ADD REMAINING INGREDIANTS

1 can mexican corn
2 cans chicken broth
1 can mexican tomatoes ( I use Rotel’s Mexican)
1 can tomato soup

SEASON WITH (I season to taste. If you like spicy add more of till it tastes the way you like it :)

1 tsp cumin
1 tsp worsteshire
1/2 tsp chilie powder
Tabasco if you dare

SERVE WITH

Tortilla Chips
Sour Cream
Lime Wedge

Happy Meals Together !
